They return every night to our family-owned stables, which are located on the west side of Manhattan in a historic neighborhood known as Hell’s Kitchen. Each working horse gets a minimum of 5 weeks’ vacation time a year, and a horse’s workday never exceeds more than 9 hours in a 24-hour period.
